  Herb Crusted Lamb Chops  Serves 2

4 each Lamb Chops

 

1 c Bread Crumbs

 

1 t each Chervil, Tarragon, Thyme

 

To Taste Salt and Pepper

 

Cooking Spray

   
 

Pre heat the oven to 350 degrees. Mix the breadcrumbs, herbs, salt and pepper in a wide bowl. Spray a pan with the cooking spray and heat well. Dip the lamb chops into the bowl of the breadcrumbs and coat both sides well. Add the lamb chops into the frying pan and brown on both sides. Place pan into the oven add cook till desired doneness.  For the sauce mix 1 cup red wine with1 oz red current jelly and reduce by half.
