How Do They Do That? ... Roasting Garlic

  february/march 2003 issue

There are many different ways to roast garlic. Some peel a portion of the outside and cook it in the skin, while this method is very simple and is easier to turn into a paste after it is cooked.

Pre heat the oven to 350 degrees. Peel the garlic completely and cut the core off. Spray a piece of tin foil with cooking spray and place the garlic in the foil and wrap. Cook in the oven for 20-30 minutes (depending on the size) and remove. You cook it till it has a brownish color and is soft in texture. Place on a cutting board and with  the side of the knife mash the garlic into a paste.
